Apple Cranberry Sauce

Ingredients

2 large golden Delicious apples, cored and finely chopped
1 large onion, finely chopped (about 1 cup)
1 1/2 cups ruby port wine
1 cup dry-packed frozen raspberries, thawed, with any collected liquid
1/2 cup sugar
1 package (12 oz) whole cranberries
1 teaspoon grated orange rind
1 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
2 tbsp. orange juice

Instructions

Place apples, onion and 1 cup wine in a large, heavy saucepan. Cover and simmer over medium-low heat 40 minutes, stirring occasionally and adding up to 1/4 cup water if mixture begins to look dry. Let stand to cool at least 15 minutes. Puree apple mixture with raspberries in a food processor or blender and return to saucepan. Stir in remaining 1/2 cup port, sugar, cranberries, orange rind, cardamom, and cinnamon. Bring to a boil over high heat, stirring often to dissolve sugar. Reduce heat to medium. Simmer, stirring occasionally, until berries pop open and mixture thickens, about 20 minutes. Stir in orange juice. Store in the refrigerator. Serve sauce cold or at room temperature. Makes 16 servings (4 cups).
