Boniatiillo Con Queso

Ingredients

2 lbs sweet potatoes, sliced or cut in chunks
2 cups sugar
1 cup water
1 8oz cream cheese, sliced
1 tsp butter
2 egg yolks
1 tsp vanilla extract
1 tsp lemon juice
2 tsp cooking wine or any white wine

Instructions

Cook sweet potatoes in minimum amount of water or warm up contents of canned sweet potatoes. Drain them. Make a syrup by combining sugar and water and let boil on 'low-medium' heat. Cook until when tested between 2 dry fingers is sticky. Mix the sweet potatoes and syrup in blender until smooth then on medium heat add remaining ingredients and mix well cooking for about 5 minutes. If cheese has not dissolved completely use hand mixer until well dissolved. Pour in dish with cover and sprinkle with cinnamon. Let cool for at least 2 hours in refrigerator.

Notes

*substitute 2 lbs canned sweet potatoes This is a very popular Cuban dessert!
