Brandied Cherries
Candy
Ingredients
Maraschino cherries
Chocolate Wafers
Brandy
Cream center mix
Instructions
Drain juice from cherries. Place drained cherries in container and cover with brandy. Cover tightly and allow to marinate for at least 24 hours. Drain brandy from cherries, reserve juice. Paint molds with an art brush to form a shell of confectionary coating. Refrigerate shells until firm. Mix two tablespoons of reserved brandy/juice with 1/2 cup cream center mix. Place small amount of this mixture in candy shell. Place a single or half cherry on top, leaving just enough room to seal the candy with melted coating. Be sure all edges are sealed, so that the candy does not leak. Refrigerate to set the sealed candies and unmold. Store at room temperature. Candies may be served as soon as they are made, but have a better flavor with more liquid if allowed to age for 2 to 3 days.
