Pie Crust

Ingredients

1 cup flour
1/4 teaspoon salt
1/3 cup butter
1 egg
1 tablespoon ice water
1 teaspoon lemon juice
2 cups dried beans (for pre-baking shell)

Instructions

In bowl stir together flour and salt. With knife, cut butter in 1/2 inch pieces, drop into flour mixture. Cut in butter until mixture resembles coarse crumbs (flour mixture should look dry rather than moist). With fork beat together egg, water and lemon juice until blended; sprinkle over flour mixture. Toss with fork, then with hand gather particles in ball. Wrap airtight and chill in freezer 10 minutes. On lightly floured pastry cloth roll out to a circle 1 - 1 1/2 inches larger than quiche pan. Trim and crimp edges. With fork prick pastry about 12 times. Cover with a circle of waxed paper, then fill with beans. Bake in preheated 425 degree oven for 12 minutes. Cool slightly. Remove beans and waxed paper. Fill with quiche filling and bake as specified.
