Cheeseless Cheesecake

Ingredients
2 cups crushed pineapple
2 envelopes Knox Gelatin
1/2 cup boiling water
1 tablespoon lemon juice
2 teaspoons vanilla extract
1 1/3 cups nonfat dry milk
artificial sweetener to equal 8 teaspoons (4 packs)
Instructions
Drain pineapple and reserve juice. Put juice in blender and sprinkle gelatin over. Add remaining liquids and blend. Add milk and sweetener and blend. Add pineapple, blend till smooth. Pour into 10" pie pan. Refrigerate.
Notes
1/4 of pie is equal to 1 fruit and 1 milk.
