Cherry Bourbon Balls

Ingredients

25 vanilla wafers
1/4 cup bourbon, such as Jack Daniels or Maker's Mark
1 cup confectioner's sugar, sifted
1 cup finely chopped pecans
3 tablespoons cocoa powder plus additional for coating
1 1/2 tablespoons light corn syrup
24 candied cherries, green or red or a combination

Instructions

Roughly crumble vanilla wafers into a large mixing bowl. Add bourbon and allow the mixture to soften, stirring once or twice, about 2 minutes. Add confectioner's sugar, pecans, 3 tablespoons cocoa powder and corn syrup. Mix with your hands or a wooden spoon until all the ingredients are thoroughly combined. Place batter in refrigerator for 10 to 15 minutes to make it easier to shape. Roll one tablespoon of batter between your palms to create a ball. Press one candied cherry inside each bourbon ball. Repeat with the remaining batter. Roll the bourbon balls in cocoa. Store the candy in layers, separated by wax paper, in an airtight container in refrigerator for as long as 1 week.
