Chicken Breasts, Well Preserved

Ingredients
2 1/2 to 3 pounds boneless, skinless chicken breasts (4 whole breasts)
1 cup matzo cake meal
1/4 teaspoon salt
pinch ground white pepper
6 tablespoons margarine
1 16 ounce jar preserves, such as black cherry, pineapple or apricot
1/2 cup white wine
Instructions
Preheat oven to 350 degrees. Cut the chicken breasts in half. Place the matzo cake meal in a pie plate and stir in the salt and pepper. Coat each breast half with the mixture and arrange them in a greased 9x13 baking dish. Melt the margarine in a medium saucepan. Add the preserves and white wine. Bring to a boil over high heat, stirring well with a wooden spoon. Pour over the chicken breast halves. Bake, uncovered, for 35 to 40 minutes or until slightly brown and crisp.
