Cranberry Glazed Appetizer Meatballs
Appetizers
Ingredients
1 1/2 pounds ground beef
1/2 cup finely chopped onion
1/2 cup plain bread crumbs
1/2 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
1 (12 ounce) bottle chili sauce
1 (8 ounce) can jellied cranberry sauce
Instructions
Heat oven to 375 degrees. In large bowl, combine first 6 ingredients; blend well. Shape into 1 inch balls; place in ungreased 15x10x1 inch baking pan. Bake meatballs for 25 to 30 minutes or until meatballs are browned and no longer pink in center. Meanwhile, in large saucepan combine chili sauce and cranberry sauce; blend well. Bring to a boil over medium heat. Reduce heat to low; simmer 5 minutes, stirring occasionally. Drain meatballs well and add to the sauce. Stir to cook. Cook over medium heat about 15 minutes to reduce sauce. Meatballs will become glazed with the sauce.
Notes
Keep the meatballs warm by serving them in a chafing dish or fondue pot. Provide small forks or cocktail toothpicks for easy eating. The meatballs may be made ahead. Prepare and bake them up to 24 hours ahead. Cover and refrigerate them. Just before serving, prepare the sauce and heat the meatballs in it.
