Fabulous Fajita Pizza

Ingredients
1 medium red bell pepper, cut into strips
1 medium green bell pepper, cut into strips
1 medium onion, sliced
Vegetable oil
1 garlic clove, pressed
1-2 teaspoons, Southwestern Seasoning Mix
1/2 cup thick and chunky salsa
Salt and ground black pepper, to taste
1 package pizza crust mix
1 1/2 cups Co-Jack cheese, shredded
Instructions
Preheat oven to 425 degrees. Spray skillet with non-stick cooking spray. Over medium-high heat, stir fry garlic 30 seconds, add bell peppers, onion and seasoning mix, stir-fry 1-2 minutes. Remove from heat; stir in salsa. Prepare pizza crust according to package directions. Roll to a 14 inch circle on a baking stone. Arrange vegetables over crust. Season with salt and pepper, if desired. Sprinkle cheese over top. Bake 18 to 20 minutes or until crust is golden brown. Cut with pizza cutter and serve.
Notes
Cook's Tip: Substitute 1-2 teaspoons of chili powder for The Pampered Chef Pantry Southwestern Seasoning Mix, if desired. CHICKEN FAJITA PIZZA: If desired, add cooked chicken. Cut two boneless, skinless chicken breasts halves (about 12 ounces) into 1 inch strips; stir fry 2-3 minutes or until meat is no longer pink. Remove from skillet. Stir-fry vegetables and proceed as recipe directs, tossing cooked chicken with vegetables and salsa mixture.
