Greek Butter Cookies

Ingredients

2 cups butter, softened
3/4 cup sifted confectioners sugar
1 egg yolk
1 tablespoon Greek Ouzo or Galliano
4 1/4 cups sifted all-purpose flour
1 teaspoon baking powder
1/3 cup finely chopped blanched almonds
1 teaspoon vanilla

Instructions

Beat butter with sugar until fluffy-light in a large bowl. Beat in egg yolk, vanilla and liqueur. Sift flour and baking powder into butter-sugar mixture; stir until well blended. Stir in almonds. Chill one hour. Shape into 1 1/2" balls, using about 1 tablespoon of dough for each cookie. (If dough sticks, lightly flour palms of hands.) Arrange on an unbuttered cookie sheet, about 2 inches apart. Bake in a moderate oven (350°) for 15 minutes. (Or until light sand color) Remove from oven and sprinkle with confectioner's sugar while hot. Sprinkle with additional sugar before serving.
