Pancake Mini Muffins

Ingredients
3 cups flour
1 tbsp baking powder
3 tbsp sugar
3/4 tsp salt
2 1/2 cups milk
1 tbsp white vinegar
2 eggs
1 tbsp vanilla
4 tbsp butter, melted
blueberries, chocolate chips, etc (optional)
warm syrup - for serving
Instructions
Preheat oven to 425 degrees (for crispier muffins) or to 400 degrees (for softer muffins). Sift together flour, baking powder, sugar and salt. Set aside. Stir together milk and vinegar and allow the mixture to sit for one minute. Whisk in the eggs and vanilla. Combine the dry ingredients with the wet ingredients, then add the melted butter and stir. If the batter becomes too thick, add a little milk. Using baking spray, grease the muffin pan generously. Fill each cup 2/3 of the way, adding 2-3 blueberries or chocolate chips. Bake for 9-10 minutes or until the muffins are golden brown on top. Let them sit in pan for 1-2 minutes before turning them out. Serve with warm syrup.
