Pork Tenderloin & Noodle Casserole

Ingredients
5 to 6 ounces noodles
1 pound pork tenderloin
salt & pepper
2 tablespoons chopped green pepper
2 tablespoons chopped pimiento

Instructions
Cut tenderloin crosswise into four portions, flatten to 1/2 inch thickness. Cook noodles as directed on package. Brown tenderloins in small amount of fat. In baking dish combine drained, cooked noodles, green pepper and pimiento. Pour cheese sauce over all, then arrange browned tenderloin pieces on top. Bake in preheated 350° oven about 30 minutes or until meat is tender. NOTE: Cover casserole during first half of baking with lid or foil, then uncover to finish. CHEESE SAUCE: Melt 2 tablespoons butter in small saucepan; stir in 2 tablespoons flour. Gradually stir in one cup milk; cook until thick, stirring constantly. Add 1 cup shredded American cheese, season with salt and pepper.
