Pumpkin Bread

Ingredients
1 cup packed brown sugar
1/3 cup granulated sugar
1 stick butter, melted
2 eggs, beaten
1 1/3 cups pumpkin
1/4 cup orange juice
1 1/4 cups flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon EACH allspice, nutmeg and cinnamon
1/4 teaspoon ground cloves
3/4 cup finely snipped dried apricots
1/2 cup finely chopped pecans
Instructions
Have oven preheating to 350 degrees. In large mixing bowl, mix together the brown sugar, granulated sugar and melted butter. Add eggs, canned pumpkin and orange juice, mixing well. Sift together both flours, baking soda, salt, baking powder, allspice, cinnamon, nutmeg, and ground cloves. Add to sugar-butter mixture and stir just until moistened. Gently fold in the apricots and pecans. Do not over-mix the batter. Turn into greased loaf pan and bake in preheated oven for about one hour (up to ten minutes more) or just until tester comes out clean. Remove from pan and cool on wire rack. Cool completely before slicing. Wrap airtight and refrigerate or freeze for storage longer than a day or two.
Notes
USE: greased 9x5x3 loaf pan.
