Quickie Olive Oil Biscuits

Ingredients

1 cup self-rising flour
3 tablespoons extra-virgin olive oil
1/4 cup milk

Instructions

Preheat oven to 400°. Place the flour in a small bowl. Make a well and add the olive oil and the milk. Stir until blended and a soft dough is formed. Add more or less milk to adjust the consistency if desired. Do not over-work, or the biscuits will be tough. Drop the soft dough from a spoon onto a baking sheet spritzed with no-stick baking spray. Bake about 10 minutes.

Notes

For color and an extra hit of flavor, add a tablespoon of chopped fresh herb such as rosemary, basil or parsley. A couple of chopped pimento-stuffed olives is a good addition, too.
