Rice Pudding

Ingredients

2 1/2 cups cooked rice
4 eggs
1 1/3 cups milk
1/8 teaspoon salt
1/2 cup brown sugar
1 tablespoon soft butter
1 tablespoon dark rum
1 teaspoon vanilla
3/4 cup raisins

Instructions

Preheat oven to 325°. Have all the ingredients at room temperature. Put the eggs in a bowl and beat well. Add the milk, salt, brown sugar, butter, vanilla, rum and raisins and mix well. Add the rice and stir the whole mixture thoroughly. Grease a 5 to 6 cup baking dish or souffle dish well with butter. Pour in the rice mixture and bake for 50 minutes or until a toothpick comes out clean. Serve hot or cold with either whipped cream or vanilla ice cream.
