Sherried Onion Casserole

Ingredients

4 cups sliced onions
3 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon white pepper
1/16 teaspoon nutmeg
2/3 cup chicken broth (one chicken bouillon cube)
1/4 cup dry sherry
1 1/2 cups bread cubes
1/2 cup grated swiss cheese
2 tablespoons Parmesan cheese

Instructions

Cook onions in butter until soft but not browned (10 to 15 minutes, medium heat). Blend in flour, salt, pepper and nutmeg. Stir in broth and sherry. Cook and stir until thickened, 5 minutes. Turn into shallow 5 cup baking dish. Top with bread cubes. Sprinkle Swiss, then Parmesan over all. Bake at 425° until crusty and brown, about 15 minutes.
