Sky High Apple Filling

Ingredients

12 cups (5-6 pounds) apples, cored and sliced or diced, peeled if desired
juice of 1 lemon
1 cup sugar
1/2 cup instant oats
1 egg, lightly beaten
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
pinch of salt
1/2 cup raisins
1/4 cup cold butter, cut in pieces

Instructions

Toss apples with lemon juice to keep color and add flavor. Combine sugar, oats, egg, cinnamon, nutmeg and salt. Stir until creamy. Spoon over apples; toss apples until evenly coated. Add raisins and butter; toss to combine. Heap filling into 10" pie shell, 6" high at center. Cover with dough, bake. Cool pie on rack, an hour or longer before cutting. (Keeps and reheats well.)
