Pie Crust

Ingredients

3 cups flour
1/2 cup shortening, chilled
1/2 cup butter, chilled
1 teaspoon salt
1 tablespoon sugar
1 egg, lightly beaten
1 tablespoon lemon juice or vinegar
1/3 cup ice water (about)
2 tablespoons milk

Instructions

Measure flour, shortening, butter, salt, sugar and 1/2 of egg into mixing bowl. With pastry blender, processor or fingers, cut together until mixture resembles a coarse meal. Stir in lemon juice or vinegar. Sprinkle water over dry ingredients, using just enough so that you can gather it into a ball that holds together. Wrap in plastic, refrigerate to chill. Divide dough into 2 parts, 1/3 and 2/3 portions. Roll out smaller part between two sheets of waxed paper to make a circle about 12" across. Line a 10" pie pan with this. Fill with apple mixture, following directions for Sky High Apple Filling. Roll out remaining dough between waxed paper sheets to make a circle about 14" across. Cut 3 slits near center. Ease top crust over apples heaped in shell. Fold top edge beneath bottom crust, press to seal. Beat milk and remaining egg together, brush on pie. Bake at 350º for 1 hour, until browned.
