Stuffed Green Pepper Soup

Ingredients

1 pound ground beef
1 envelope dry onion soup mix
1 (14 1/2 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 cup cooked white rice
2 large green peppers, chopped
1 cube beef bouillon
1/8 cup packed brown sugar
1 1/4 cup water
mozzarella cheese for top

Instructions

Cook rice according to directions. In large pot, brown beef thoroughly. Drain grease and return to pot. Stir in soup mix and heat. Add remaining ingredients (except rice) and bring to a boil. Simmer for 30-40 minutes or until peppers are soft. Add rice and heat through. Sprinkle cheese on top when serving.
