Stuffed Shells Florentine with Cheese

Ingredients

1 Twelve ounce package stuffing shells
1 1/2 pounds ricotta or dry cottage cheese
1 egg, slightly beaten
1 tablespoon chopped fresh parsley
1 teaspoon salt
1/4 teaspoon pepper
1 10 ounce package frozen chopped spinach, cooked and drained
3 cups prepared spaghetti sauce
1/4 cup grated parmesan cheese

Instructions

Prepare stuffing shells according to package directions. Drain. Whip ricotta cheese until smooth (this can be done in food processor). Stir in egg, parsley, salt and pepper. Fold in spinach. Fill shells equally with filling. Spread thin layer of sauce in 13-by-9-inch baking dish. Place shells in single layer; top with remaining sauce and sprinkle with cheese. Cover; bake in 350° oven 25 to 30 minutes or until hot and bubbly.
