Sweet Potato Casserole

Ingredients
4 cups cooked, mashed, fresh sweet potatoes
3/4 cup packed brown sugar
1/2 cup milk
3 eggs beaten
1/4 cup butter or margarine, melted
1 teaspoon vanilla extract
1 teaspoon grated orange peel
1/2 teaspoon ground nutmeg
1/4 cup flaked coconut
1/4 cup pecan halves or pieces
1/4 cup dried sweetened cranberries
Instructions
Preheat oven to 350 degrees. Combine sweet potatoes, brown sugar, milk, eggs, butter, vanilla, orange peel and nutmeg in a large mixing bowl until well blended. Pour mixture into baking pan. Sprinkle coconut and pecans in center of sweet potatoes, leaving a border around the outside edge. Reserve dried cranberries for garnish. Bake 40 to 45 minutes or until sweet potatoes are set. Remove pan from oven. Garnish with dried cranberries.
