Ingredients
2 cups mashed sweet potatoes (peel and boil til soft/drain off water and mash
1 1/2 cup sugar
2 eggs
3/4 stick butter
3/4 cup milk
3/4 cup crushed corn flakes
1/2 cup pecans, crushed
1/2 cup brown sugar
3/4 stick butter
Instructions
Preheat oven to 400 degrees. Add 1 1/2 cup sugar, 2 eggs, 3/4 stick butter and 3/4 cup milk to mashed sweet potatoes, mixing well, and bake in greased casserole for 20 minutes. Melt butter on low heat, add brown sugar and cook for approximately 4 minutes. Add corn flakes and pecans. After potatoes have baked for 20 minutes, spread topping on them and bake an additional 10 minutes.
