Szechwan Cherry Chicken

Ingredients

1 large onion
1 pound chicken breast
1 green pepper
2 jalapeno peppers - seeded & thinly sliced
2 tablespoons cornstarch
1 16 ounce can tart cherries
1 20 ounce can pineapple chunks
1/3 cup brown sugar (packed)
2 tablespoons cider vinegar
1 teaspoon sesame oil
1/2 teaspoon hot chili oil
1/2 teaspoon salt

Instructions

Drain cherries and pineapple, reserve juice. Cut chicken into bite size pieces. Stir fry chicken, onion, green pepper and jalapeno peppers, remove from wok and set aside. Whisk reserved juice and cornstarch, add brown sugar, vinegar, oils and salt. Cook until thickened, stir in chicken/pepper mixture, cherries and pineapple and heat through. Serve over rice.
