Ingredients
6 cups zucchini
1 1/4 cups sugar
1 1/2 tablespoons flour
1 1/2 teaspoons cream of tartar
1 1/2 teaspoon cinnamon
dash of salt
dash of nutmeg
Instructions
Peel and remove seeds from large zucchini and cut into slices about the size of apples. Add water to cover zucchini and bring to a boil. Simmer until tender. Drain and let cool. Mix remaining ingredients and stir into zucchini. Pour mixture into pie shell. Cover with another crust, seal and bake at 400º for 40 to 50 minutes.
